Nothing reminds me of home like corn, or as we Nigerians like to call it, maize.

I grew up eating corn and loved it. It was a way we bonded at home. My parents would pluck fresh corn from the farm, boil it, and we’d eat in the dining room, listening to their childhood stories. I also got exposed to roadside corn—not the healthiest option, but the roasted corn was divine.

Whenever I had a little extra money, I’d squeeze in some change to buy roadside roasted corn and have it with coconut or roasted African pear (ube). My mom frowned at this practice due to hygiene issues and made it a point of duty to buy the local corn herself and roast it at home.

When I moved abroad, one of the things I craved was corn recipes. I wanted to bite into my roasted corn and have it with some coconut or ube, but it wasn’t available. It also didn’t help that I didn’t have a grill to roast my corn.

I dealt with this frustration for a while until I had a light bulb moment: I decided to try using my air fryer, and it was amazing. This recipe reminds me of Nigeria, and whenever I have it, I feel close to home.

My Air-Fried Corn Recipe

Here’s a simple recipe to make delicious air-fried corn that will remind you of home. Bring a piece of Nigeria to your kitchen.

Ingredients

• 3 medium-sized corn.

Equipment

• Airfryer

Instructions

1. Dehusk the corn.
2. Set Airfryer to 375°F – Roast.
3. Roast for 25 minutes, flipping halfway through.
4. Enjoy alone or with coconut.
