How to Make Delicious Veggie Sandwich Toasties

I grew up in Nigeria, where we called it toasted bread instead of toast. It wasn’t something we ate every day, but it felt like a special treat whenever our parents surprised us with it. Nigerian toasted bread was always worth the wait.

As I got older, I started to focus more on eating healthier. That’s when I realized I could recreate the toast bread I loved as a child—with a twist. Enter the veggie toastie: a delicious, wholesome upgrade to my nostalgic favorite.

Ingredients

  • 4 slices of bread 
  • 4 tbsp vegetable sauce  
  • 1 tsp olive oil 

Instructions

  1. Preheat sandwich maker till read 
  1. Drizzle a thin layer of olive oil one side of each slice of bread 
  1. Spread the veggie sauce on the unbuttered side of two slices of breads 
  1. Place the remaining slices of bread on top, oiled side facing up 
  1. Place the assembled sandwiches in the sandwich maker and grill for 2 minutes, or until golden and crispy 
  1. Serve hot with tea or coffee  

Notes

  • Bread Options: You can use any type of bread you prefer, such as white or whole wheat. For a healthier option, try whole grain bread. 
  • Vegetable Sauce Substitute: If vegetable sauce is not available, you can use other fillings like mayonnaise and sardine, egg sauce or peanut butter.  
  • Extra Fillings: Feel free to add cheese, or a slice of protein (like cooked chicken or turkey) for a more filling sandwich. 
  • Adjust Grilling Time: Cooking time may vary depending on your sandwich maker, so keep an eye on the toasties to avoid over-browning. 
  • Olive oil substitute: You can use 2 tablespoons of butter or margarine instead of olive oil.
